Rhubarb Apple Crisp...

It's summer and walking through the produce isle late last night I saw Rhubarb.  Rhubarb looks like giant red celery stalks. 

I started wondering while I was shopping...   Could I actually make a sugar-free, flour free Rhubarb and (something--fill in the blank with another fruit you like) crisp??? 


Desserts are not my thing, but something about the Rhubarb was challenging me, so I bought a couple stalks, a couple Granny Smith's, a cup opf barley oats (which are much lower in carbs than the rolled oats) and I was out the door with my bag of goodies and up for the challenge! 

Could I pull it off?  More importantly, would it taste good??? 

The verdict:

IT'S DELICIOUS!!

Eagle and turtles

Yesterday was such a beautiful day and while we can't always choose the perfect "light" for our subjects, I was able to capture a few nice images.  This pair of eagles lives on my mom's property, they also have five tutles that I saw sitting on a log sunning themselves. There's so much cotton wood in the air right now, which on the surface of the pond, but the reflections of the turtles were still visible.

I don't often get a chance to shoot much nature and wildlife anymore, but it's where my roots are and where my passion for photography began... 

It was a perfect day!
